Smoked Chorizo Sausage Recipe

The rich and spicy flavor of traditional chorizo is combined with the smoky goodness of the smoker in this smoked chorizo sausage recipe. These sausages are easy to make and taste delicious, making them ideal for adding a little heat to any meal.

Ingredients

Time Needed

  • Prep Time: 1 hour, 30 minutes
  • Cook Time: 3 hours
  • Total Time: 4 hours, 30 minutes

Instructions

  • In a large mixing bowl, combine all of the ingredients except the hog casings.
  • Mix everything together thoroughly until the spices are evenly distributed throughout the meat.
  • Allow the mixture to chill for at least 1 hour.
  • Soak the hog casings for 30 minutes in cold water.
  • Tie off the end of the hog casings and thread them onto a sausage stuffer.
  • Fill the casings with the meat mixture, twisting every 4 inches to make individual sausages.
  • Refrigerate the sausages for at least 1 hour before cooking.
  • Preheat your smoker to 225°F and smoke the sausages for 2-3 hours, or until the internal temperature reaches 160°F.
  • Remove the sausages from the smoker and set them aside for 10 minutes to rest before serving.
