Instructions

  • Preheat the oven to 350°F.
  • Season the pork roast with salt and pepper to taste.
  • In a Dutch oven, heat the olive oil over medium-high heat.
  • Sear all sides of the pork roast until browned.
  • Set aside the pork roast from the Dutch oven.
  • Sauté the onion and garlic in the Dutch oven until soft.
  • Bring the chicken broth and white wine to a simmer in the Dutch oven.
  • Add the rosemary and thyme sprigs to the Dutch oven with the pork roast.
  • Place the Dutch oven in the oven and cover with a lid.
  • Bake the pork roast for 2-3 hours, or until it is fork-tender.
  • Allow the pork roast to rest for 10-15 minutes after removing it from the Dutch oven.
  • Serve the pork roast with the pan juices.
